Boned Turkey

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Roll the turkeys in paper well greased with lard and place them in the oven to roast.

  3. Prepare a jelly from pigs' feet, seasoning it with onion, pepper, and coarse sea salt.

Layer and set

  1. In an oblong pan, layer some jelly, followed by slices of carrots, beets, hard boiled egg, parsley, cranberries, olives, lemon, and orange.

  2. Add layers of sliced turkey, seasoned sausage meat, and thin slices of pork.

  3. Pour more melted jelly over the layers and set aside to cool.

Serve

  1. When ready to serve, dip the pan in hot water to turn it out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkeys
Provide the main meat, which is roasted until cooked through.
Jelly made from pigs' feet
Sets around the layers, binding the ingredients into a sliceable mold.
Lard
Greases the paper wrapping, adding fat that helps the skin brown and keeps it from sticking.
Seasoned sausage meat
Adds savory, fatty richness and flavor to the layers.
Cranberries
Add tart acidity that balances the rich meat and jelly.

The step that matters

Pour more melted jelly over the layers and set aside to cool.. The jelly must be fully melted and poured over the layers so it fills the gaps; as it cools and sets, it holds the layers together so the mold can be turned out cleanly and sliced.
