Egg and lemon barely smell alike, yet cooks put them together in 44,316 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Gelatine
Sets the cooking liquid into a firm jelly that holds the loaf together when sliced.
Hard-boiled eggs
Add a soft, firm texture and mild richness between the layers of veal.

The step that matters

Pressing the layers in the mold. Packing the veal and egg layers firmly removes air gaps, so the loaf slices cleanly and holds its shape once the gelatine has set.
