Fish Sauce

Ingredients

Directions

  1. In a granite saucepan, melt the butter and add the onion, parsley, thyme, bay leaf, salt, and pepper.

  2. Pour in the white wine and lemon juice, then cook the mixture.

  3. Once cooked, pour the sauce over your fish and cover it, cooking very slowly.

  4. When the fish is cooked, place it on a serving plate and keep it warm in the oven.

  5. Reduce the sauce, then stir in the beaten egg yolks and butter without letting it boil.

  6. Strain the sauce and pour it over the fish, serving it very hot.
