What each ingredient does

Whiskey
Provides the main spirit base and strength of the punch.
Apollinaris water
Adds carbonation, giving the punch its effervescence and lightness.
Sugar
Sweetens the punch and balances the acidity of the lemon juice.
Lemons
Add acidity and fresh citrus flavour that cuts the sweetness.
Jamaica rum
Adds depth and a rich, aromatic note to the punch.

The step that matters

Just before serving, add the remaining Apollinaris. Carbonation escapes from water over time, so adding the last portion right before serving keeps the punch lively and effervescent rather than flat.
