Father's Blackberry Wine
Ingredients
Directions
Prepare the mixture
Wash the blackberries thoroughly.
Pour 1 quart of boiling water over the berries.
Let the mixture stand for 24 hours or until it begins to ferment.
Ferment and rack
Press out all the juice and transfer it to a bag or jar, reserving some juice to top off later.
Allow the mixture to ferment, topping off as needed until fermentation stops.
Rack the wine off into a clean barrel and cork it lightly.

What each ingredient does
- Blackberries
- Provide the fruit juice and flavour that form the body of the wine.
- Boiling water
- Extracts juice and flavour from the berries and helps begin the mixture's breakdown.
The step that matters
Topping off during fermentation. Keeping the container full limits contact with air, which can allow spoilage microbes and oxidation to spoil the wine. Topping off with reserved juice keeps the surface covered until fermentation stops.
