What each ingredient does

Green tomatoes
Main vegetable that gives the relish its bulk and body once salted and drained.
Onions
Add sweetness and savory depth, softening as they cook in the vinegar.
Vinegar
Provides the acidity that preserves the relish and gives it its sharp flavor.
Mustard seed
Adds sharp, pungent heat that defines the relish's flavor.

The step that matters

Drain and press the salted tomatoes dry. Salt draws water out of the tomatoes, and any moisture left behind dilutes the vinegar and weakens both flavor and keeping quality.

Swap the tomato

How well each one fits the dish's main ingredients (onion, mustard, pepper, ginger, clove, vinegar):

  1. Horseradishfits better
  2. Shallotfits better
  3. Broccolifits better
  4. Tomatothe original

Fit is the average pairing score against onion, mustard, pepper, ginger, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
