Oil Cucumber

Ingredients

Directions

Prepare the cucumbers

  1. Peel and cut the cucumbers into thick slices, about 1 inch, or cut them lengthwise.

  2. Add the sliced onion and sprinkle generously with coarse sea salt.

  3. Let it stand overnight.

  4. Drain the cucumbers in a colander for 4 to 5 hours.

Pack and pickle

  1. In a quart jar, add 3 teaspoons of salad oil, then layer in the cucumbers and horseradish.

  2. Sprinkle a little cayenne pepper, black pepper, and turmeric over the layers.

  3. Fill the jar with strong cold vinegar, ensuring the cucumbers are fully submerged, and cover tightly.

What each ingredient does

Cucumbers
Form the crisp, bulky body of the pickle that absorbs the seasoned vinegar.
Onion
Adds sharp, savoury flavour that mellows as it sits in the vinegar.
Salad oil
Carries the spices and coats the vegetables, adding richness and mouthfeel.
Horseradish
Contributes pungent heat and aroma that deepens during pickling.
Strong cold vinegar
Provides the acidity that preserves and sharpens the pickle.

The step that matters

Salting and draining the cucumbers. Salt draws water out of the cucumber through osmosis. Draining it fully removes that liquid so the pickle stays crisp and the vinegar is not diluted.
