An Excellent Sausage to Eat Cold

Ingredients

Directions

  1. Season the lean and fat pork with coarse sea salt, saltpetre, black pepper, and allspice, all in fine powder, and rub into the meat.

  2. On the sixth day, cut the meat small and mix it with finely shredded shallot or garlic.

  3. Prepare an ox intestine that has been scoured, salted, and soaked well.

  4. Fill the intestine with the meat mixture, tie up the ends, and hang it to smoke like hams, wrapping it in old muslin first.

  5. Ensure it is high-dried. Some eat it without boiling, while others prefer it boiled.

  6. Tie the skin in different places to make each link about eight or nine inches long.
