Nut Parfait

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the nuts

  1. Preheat the oven to 350°F (175°C).

  2. Toast the nuts in the oven until slightly crisp, then cool them.

  3. Roll the cooled nuts with a rolling pin instead of chopping them.

Make the meringue

  1. Beat the egg whites to a stiff froth.

  2. Boil the sugar and water until it reaches a syrup consistency.

  3. Slowly pour the syrup onto the beaten egg whites while continuing to beat until cool.

Assemble and freeze

  1. Fold in the nuts, vanilla, and whipped cream.

  2. Pack the mixture into one-pound baking powder cans.

  3. Surround the cans with ice and rock salt, and let stand for 8 hours or more.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whipped cream
Adds air and richness, giving the parfait a light, creamy texture.
Egg whites
Whipped into a foam that gives the parfait its light, airy structure.
Sugar
Sweetens the mixture and, boiled into a syrup, helps stabilise the whipped egg whites.
English walnuts
Add crunch and nutty flavour; toasting deepens their taste and firmness.

The step that matters

Pouring the hot syrup into the egg whites. The syrup must be poured slowly while beating so it cooks the whites and forms a stable foam; pouring too fast can deflate the whites and leave the mixture grainy or loose.

Swap the walnut

How well each one fits the dish's main ingredients (cream, egg, sugar, nuts, vanilla):
