Clam Chowder

Ingredients

Directions

  1. Drain and dry the oysters with cheesecloth. Dust with salt and cayenne pepper.

  2. Beat the eggs and add hot water. Dip the oysters first in bread crumbs, then in the egg, and back in the crumbs.

  3. Lift the oysters with your fingers and place them on a board.

  4. Heat the olive oil until smoking hot. Place the oysters in a wire basket, cooking five or six at a time.

  5. Fry until golden brown, then lift carefully and place on brown paper in a baking pan.

  6. Garnish with lemon and parsley, and serve very hot.
