What each ingredient does

Drippings or oil
Fat that browns the kidney slices and carries flavor into the sauce.
Gravy (beef)
Liquid base that gives the sauce its savory, meaty body.
Browned flour
Starch that thickens the sauce and adds a toasted, nutty note.
Chopped onion
Adds aromatic sweetness and depth to the sauce as it cooks.
½ cup good wine
Adds acidity and aroma that brighten the sauce's savory flavor.
Juice of 1 lemon
Adds sharp acidity that lifts and balances the richness of the sauce.

The step that matters

Adding the wine and lemon juice. Wine's aroma is volatile and lemon's brightness fades with prolonged heat, so boiling the sauce hard after these go in dulls both. Keep the sauce at a gentle simmer and serve soon after adding them.

Swap the onion

How well each one fits the dish's main ingredients (beef, parsley, pepper, flour, wine, lemon):

  1. Shallotfits better
