Scalloped Beef

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the beef into small pieces, no larger than ½ inch square.

Layer and bake

  1. Line the bottom of a pudding dish with crushed sea‑foam crackers moistened with milk.

  2. Layer the beef on top, seasoning with pepper and coarse sea salt, and sprinkle with bits of butter.

  3. Repeat the layers, finishing with a layer of moistened crackers.

  4. Before adding the top crust, pour in 1 cup of gravy or a mixture of milk and hot water with a small lump of butter.

  5. Cover with a plate or pie tin and bake at 350°F (175°C) for 45 minutes.

  6. Remove the cover and brown the top nicely.

What each ingredient does

Cold corned or roast beef
Forms the savoury, meaty filling that makes up the body of the dish.
Sea-foam crackers
Crushed and moistened, they soak up liquid and form the soft layers between the beef.
Milk
Moistens the crackers and, with hot water, makes the liquid that keeps the dish moist.
Butter
Adds richness and helps the top brown during baking.
