What each ingredient does

Beef
Browning and simmering build the meat's savory flavor and make it tender over a long cook.
Flour
Thickens the cooking liquid into a smooth, body-rich gravy.
Potatoes
Soften during simmering and add starch that thickens the stew slightly.

The step that matters

Stirring the flour-and-water mixture smooth before adding it. Flour lumps form if it is added directly to hot liquid without first being dispersed in cold water, leaving an uneven, lumpy gravy.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, potato, flour, pepper):

  1. Parsnipfits better
  2. Leekfits better
  3. Okrafits better
  4. Onionthe original
