What each ingredient does

Cranberries
Provide the tart flavor and natural pectin that thickens the sauce as the berries break down.
Sugar
Adds sweetness that balances the tartness and helps give the sauce body and a glossy set.

The step that matters

Simmer and stir often. Sugar and fruit scorch easily on the bottom of the pot. Frequent stirring keeps the mixture from sticking and burning, which would give a bitter taste. Gentle simmering lets the berries soften and release pectin evenly.
