Baked Tapioca Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tapioca

  1. Wash the tapioca in plenty of water and soak it in cold water for 1 hour.

  2. After soaking, add the milk and cook in a double boiler for 1 hour.

  3. Let the mixture cool.

Assemble and bake

  1. Beat the salt, sugar, and eggs together.

  2. Add the beaten mixture to the cooked tapioca and milk.

  3. Pour the mixture into a pudding dish.

  4. Cut the orange into thin slices and lay them over the top.

  5. Bake for 40 minutes at 350°F (175°C).

Quicker version

  1. For a quicker version, add the eggs and sugar to the hot mixture and bake for 15 to 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cool and bake, giving the pudding its body.
Tapioca
Thickens the milk as it cooks, giving the pudding its creamy, pearly texture.
Milk
Forms the liquid base that the tapioca thickens and the eggs set.
Sugar
Adds sweetness and helps balance the savory eggs and salt.

The step that matters

Cooling before adding the eggs. Adding beaten eggs to a very hot mixture can scramble them. Letting the cooked tapioca cool first lets the eggs blend smoothly and set evenly in the oven.

Swap the orange

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
