Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast cake
Ferments the dough so it rises and becomes light.
Coarse entire wheat flour
Forms the structure of the loaf and gives it a hearty texture.
Milk
Adds moisture and richness to the dough and softens the crumb.
Sugar
Feeds the yeast and adds sweetness and browning to the crust.

The step that matters

Letting the dough rise until it doubles. Yeast needs time to produce gas that expands the dough; under-proofed dough bakes dense, while over-proofed dough can collapse and lose structure.
