Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and layer

  1. Peel and slice the tomatoes.

  2. Cover the bottom of a buttered baking dish with a layer of tomatoes.

  3. Season with cayenne pepper, sugar, and coarse sea salt.

  4. Sprinkle with bread crumbs and add bits of butter.

  5. Repeat layers until the dish is full, finishing with bread crumbs and butter on top.

Bake

  1. Bake in a 400°F (200°C) oven for 20 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the juicy base that softens and bakes into a saucy filling.
Bread crumbs
Absorb tomato juices and brown on top, giving the dish a crisp, set texture.
Butter
Adds richness and helps the top crumbs brown in the oven.
Sugar
Balances the acidity of the tomatoes and adds mild sweetness.

The step that matters

Layering the bread crumbs and butter. Crumbs need enough butter to brown rather than dry out, and the top layer must be complete so it crisps evenly. Tomato juice soaks into the crumbs, so the layers should be built in order to keep the dish from turning soggy.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, sugar, bread, butter):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against pepper, sugar, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
