Almond Ice Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Preheat the oven to 350 °F (175 °C) and brown the almonds.

  2. Pound the browned almonds very finely.

Make the base

  1. In a double boiler, heat 1 pint of cream and 1 cup of sugar until the sugar dissolves.

  2. Remove from heat and cool the mixture.

Combine and freeze

  1. Add the ground almonds, 1 pint of whipped cream, sherry wine, and vanilla.

  2. Freeze the mixture.

Pack and set

  1. Fill a mold with the ice cream, cover it, and pack it in ice and salt.

  2. Let it stand for 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Toasted and finely ground, they give nutty flavour and body to the mixture.
Cream
Its fat gives the ice cream a rich, smooth mouthfeel.
Whipped cream
Whipped air lightens the texture so the frozen result is less dense.
Sugar
Sweetens the base and keeps the frozen texture softer and easier to scoop.
Sherry wine
Adds aromatic flavour and, as alcohol, helps keep the frozen mixture from setting too hard.
Vanilla
Adds a warm, aromatic background flavour.

The step that matters

Cool the mixture before adding the whipped cream. If the cooked base is still warm, the whipped cream will deflate and melt, weakening the airy texture. A fully cooled base also freezes more evenly, with smaller ice crystals and a smoother result.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, sherry, wine, vanilla):

  1. Chestnutfits about as well
  2. Almondthe original
  3. Cocoafits less well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, sugar, sherry, wine, vanilla. Candidates are from the same food group and used in at least 100 recipes.
