Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until very stiff.

  3. Gradually add the sifted sugar and continue beating.

  4. Fold in the chopped almonds and grated chocolate.

  5. Add enough matzo flour to make a stiff batter.

Bake

  1. Drop by teaspoonfuls onto buttered and floured pans.

  2. Bake in the preheated oven until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a stiff foam that gives the macaroons their light, airy structure.
Sugar
Sweetens the batter and helps stabilize the whipped egg whites.
Chopped almonds
Add nutty flavor and body to the batter.
Grated sweet chocolate
Adds flavor and color to the batter.
Matzo flour
Thickens the batter so the mixture holds its shape when dropped.

The step that matters

Folding in the almonds and chocolate. Once the egg whites are whipped, overmixing or stirring vigorously deflates the foam, which makes the macaroons flat and dense instead of light.
