Fish Turbot

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Steam the fish until tender, then remove the bones and separate it into flakes.

Make the sauce

  1. In a saucepan, heat the milk and thicken it with flour and butter beaten to a cream.

  2. Once cool, add the beaten eggs to the sauce.

Assemble and bake

  1. In a baking dish, layer the fish and sauce alternately.

  2. Cover the top with bread crumbs and bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Fish
Forms the flaky body of the dish once cooked and separated.
Milk
Forms the liquid base of the sauce that moistens the fish.
All-purpose flour
Thickens the milk into a sauce as it heats.
Butter
Adds richness and fat, and is creamed with flour to thicken the sauce.
Eggs
Enriches the sauce and helps it set when baked.

The step that matters

Adding the eggs to the sauce. If the sauce is too hot when the beaten eggs go in, the eggs can scramble and become grainy. Letting it cool first keeps the sauce smooth and helps it set evenly in the oven.
