What each ingredient does

Cauliflower
Forms the salad's main body, becoming tender when boiled and holding its shape once cooled.
Mayonnaise dressing
Adds richness and moisture, coating the cauliflower pieces with a creamy, tangy layer.

The step that matters

Drying the cauliflower carefully. Excess water left on the cooked cauliflower dilutes the mayonnaise dressing and makes it slide off or go watery. Drying the pieces lets the dressing cling and keeps the salad from weeping.
