What each ingredient does

Cucumbers
Form the pickled body; scraping and brining prepare their texture for the syrup.
Vinegar
Provides the acidity that preserves and sharpens the pickles.
Sugar
Balances the sharp acidity with sweetness and helps build the thick syrup.

The step that matters

Cooking the cucumbers in the boiling syrup. Adding too many slices at once drops the syrup's temperature and slows cooking, so the cucumbers may not turn clear evenly. Cooking in small batches keeps the syrup hot and the pieces uniformly cooked.

Swap the cucumber

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Mustardfits better
  2. Capsicumfits about as well
  3. Cucumberthe original
  4. Beetrootfits less well

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
