What each ingredient does

Oatmeal
Starch from the oats thickens the water into a creamy, smooth drink.

The step that matters

Boil until creamy and smooth. Oat starch and fibre need sustained heat over a long period to swell and break down. If the boil is too short, the drink stays gritty and thin.
