What each ingredient does

Irish moss
Dissolves into the liquid and thickens it, giving the lemonade a light, gelled body.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Sugar
Adds sweetness that balances the acidity of the lemon juice.

The step that matters

Cleaning the soaked moss. Irish moss is a seaweed that often holds sand and debris. Picking it over thoroughly before steeping keeps grit out of the drink, and straining through cheesecloth catches anything that remains.
