Why it works: Pork and beef match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,690 recipes. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓
Cold Snipe Pie
Ingredients
Directions
Fill the snipe with force-meat, ham, lard, and sherry wine.
Grease a game-pie mold and line it with short paste.
Layer the filling with half of the snipe, then more force-meat, and the remaining snipe.
Finish with force-meat and thin slices of fat pork topped with bay leaves.
Wet the edges, cover with a thin layer of paste, and seal by pressing the edges.
Trim and pinch the edges with a pastry pinch.
Egg wash the surface and place a thin round of feuilletage paste on top.
Egg wash again, trace lines, and make a 1-inch hole in the center.
Cook slowly for 2 hours.
Cool partially, fill the pie through the hole with jelly, and cool thoroughly before serving.
