What each ingredient does

White crushed sugar
Dissolves into the water and reduces to a syrup that sweetens the fruit.
Wild strawberries
Provide the fruit, flavour and body of the compote.

The step that matters

Adding the strawberries off the heat. Strawberries are delicate and soften quickly in hot syrup. Adding them off the heat and folding gently keeps the berries whole and their shape intact, while still letting the warm syrup coat them.
