Why it works: Onion and cucumber match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Leg of Mutton, with Cucumbers

Ingredients

Directions

Prepare the mutton

  1. Beat the leg of mutton well to tenderize it.

  2. Place the mutton in a stewpan with onions, fine herbs, spices, salt, and enough water to cover.

  3. Cover the stewpan and cook the mutton until tender.

  4. Skim off the grease from the top of the broth.

Roast and finish

  1. In another stewpan, melt some butter.

  2. Roast the mutton until it is nicely browned.

  3. Add some of the broth to the roasted mutton to create a sauce.

  4. Mix in the quartered cucumber. Boil together briefly.

  5. Serve the dish very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of mutton
Provides the main meat, which the beating and slow simmering make tender.
Onions
Add savory sweetness and aroma to the cooking broth.
Butter
Carries heat and encourages browning on the mutton during roasting.
Cucumber
Adds cool, fresh crispness that contrasts with the rich meat.

The step that matters

Roast the mutton until nicely browned. Browning develops flavor through the Maillard reaction, which needs dry surface heat. Pieces that are still wet from the broth will steam rather than brown, so they should be drained and dried first.
