Ingredients

Directions

  1. Wash and rub the truffles in several waters.

  2. Peel and finely chop the less beautiful beet.

  3. In a stewpan, combine the chopped beet, whole beets with skins, lard, sweet herbs, salt, pepper, and lemon juice.

  4. Cook over gentle heat for 1 hour, then remove and let cool.

  5. Mash the fowls' livers with some chopped truffles in a mortar.

  6. Mix the liver mixture with the cooled ingredients.

  7. Stuff the pullet with the mixture and sew it up.

  8. Let the pullet sit for a few days to absorb the truffle flavor.

  9. Roast the pullet wrapped in buttered paper.
