Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the Nuns' Cakes paste.

  2. Form small balls and place them on greased thin iron plates or tins, spaced apart.

  3. Brush the balls with egg yolks.

  4. Bake in a moderately hot oven at 350°F (175°C).

  5. A moment before they are fully cooked, remove them from the oven and sprinkle with powdered sugar.

  6. Return them to the oven to glaze beautifully.
