Little Anchovy Pies

Ingredients

Directions

  1. Cut new anchovies into pieces and soak them in water to remove excess salt.

  2. Dry the anchovies with a towel and soak them for 2 to 3 hours in a mixture of oil, peppercorns, parsley, and chopped shallots.

  3. Remove some anchovy pieces and set them aside. Chop the remaining anchovies finely.

  4. Mix the chopped anchovies with grated soft bread, lemon peel, and 1 or 2 eggs.

  5. Place small heaps of this mixture in the bottom crusts of puff pastry.

  6. Top each with 2 pieces of the reserved anchovies in a cross shape.

  7. Cover with another layer of puff pastry and brush the tops with egg yolk.

  8. Before serving, open the pies and squeeze a little lemon juice inside, then replace the crust and serve hot.
