Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Beat the yolk and white of the egg separately.

  2. Beat the egg white to a stiff froth.

  3. Mix the beaten yolk with the oatmeal and milk, then beat thoroughly.

  4. Gradually add the flour and salt while continuing to beat.

  5. Fold in the beaten egg white gently.

Bake and serve

  1. Preheat the gem irons and lightly butter them.

  2. Drop in the batter, filling the cups nearly full.

  3. Bake in a 400°F (200°C) oven until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
The whites, beaten to a stiff froth and folded in, lighten the batter and help it rise.
Oatmeal
Provides the bulk and body of the batter, giving the gems their hearty texture.
Milk
Adds moisture and loosens the batter so it can be beaten smooth and dropped into the irons.
White flour
Provides structure, setting the batter as it bakes.

The step that matters

Folding in the beaten egg white. Stirring vigorously deflates the foam that gives the batter its lift. Fold gently, so the air stays trapped and the gems rise in the oven instead of turning dense.
