What each ingredient does

Cabbage
Forms the body of the dish, softening into tender leaves as it boils.
Butter or cream
Adds fat and richness that coats the cooked leaves and carries flavor.

The step that matters

Pressing out all the water. Cabbage releases water as it cooks. Leftover water dilutes the flavor and keeps butter or cream from clinging to the leaves, so the cabbage turns soggy. Squeezing it out before seasoning keeps the dish rich and well flavored.
