Baked Vegetable Marrow

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the marrow

  1. Pare and cut the vegetable marrow in half, then remove the seeds and fibers.

  2. Rub the inside and outside with coarse sea salt and let it stand for 1 hour.

Make the filling

  1. Boil and chop the turnip or potato and a few onions.

  2. Mix the chopped vegetables with powdered sage, butter, bread crumbs, and salt.

Bake and serve

  1. Fill the marrow halves with the mixture, close them, and tie with twine.

  2. Place in a dish and bake until brown.

  3. Serve with brown sauce.

Turnip or potato
Adds starchy bulk to the filling, giving it a soft, moist body.
Butter
Adds fat for richness and helps the filling brown on the surface.
Bread crumbs
Absorb moisture from the vegetables and help the filling hold together.
