Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps preserve the liquid while it ferments.
Flour
Provides starch that feeds the fermentation and thickens the batter.
Potatoes
Supply starch and moisture that feed the wild yeast in the batter.
Sugar
Feeds the yeast, driving fermentation and gas production.

The step that matters

Setting the batter in a warm place for 3 days. Yeast and bacteria are active only within a suitable temperature range. Too cool slows fermentation, and too hot can kill yeast or favor spoilage, so the batter needs steady warmth and regular stirring.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
