Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Roast Lamb

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wipe the lamb thoroughly with a towel soaked in salt water and place it in a dry pan.

  2. Add the sliced onions and carrots.

  3. Dredge the lamb with pepper, coarse sea salt, and flour, using the flour liberally.

Roast and baste

  1. Roast in a closed oven at 400°F (200°C) for 30 minutes.

  2. Baste with boiling water and cook for 1.5 hours, ensuring there is plenty of water in the pan.

Make the gravy

  1. When done, remove the meat and stir a little more flour into the gravy.

  2. Add 2 quarts of boiling water and let it simmer for 5 minutes.

What each ingredient does

Lamb
Is the main protein, cooked slowly in a closed oven until tender.
Flour
Dredged on the meat and stirred into the gravy, where it thickens the pan juices.
Onions
Sliced into the pan, they add sweetness and flavour to the drippings that become the gravy.
Carrots
Sliced into the pan, they add sweetness and flavour to the drippings that become the gravy.

The step that matters

Keep plenty of water in the pan while basting. The pan needs enough liquid during the long roast so the drippings do not scorch or burn. Those drippings form the base of the gravy, so running dry would spoil both the meat's surface and the sauce.

Swap the onion

How well each one fits the dish's main ingredients (lamb, carrot, pepper, flour):

  1. Parsnipfits better
  2. Turnipfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against lamb, carrot, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
