What each ingredient does

Barley
Its starch thickens the broth and gives the soup body and a chewy texture.
Egg yolk
Enriches and thickens the soup when stirred in off the heat, adding richness.
Cream
Adds fat and smoothness, softening the flavor and making the soup feel richer.
Milk
Adds creaminess and mild sweetness to the broth.
Carrots
Contribute natural sweetness and color while softening into the soup.

The step that matters

Stirring the egg yolk and cream into the soup. Adding the yolk to a boiling liquid can scramble it. Removing the pot from heat first lets the yolk thicken gently and smoothly without curdling.

Swap the mace

How well each one fits the dish's main ingredients (barley, onion, carrot, milk, butter, pepper, egg):

  1. Parsleyfits better
  2. Celeryfits better
