Egg Border with Rice and Curry Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir together the eggs, milk, onion juice, salt, and pepper until well combined.

  3. Grease a border mold with butter and sprinkle with minced parsley.

  4. Prepare rice by boiling it in salted water for 20 minutes, then drain well.

  5. In a separate bowl, mix curry powder into the cream sauce.

Make the border

  1. Pour the egg mixture into the mold and place it in a pan of boiling water.

  2. Cover and cook in the oven for 5 to 10 minutes until firm.

Serve

  1. Turn the egg border out onto a hot platter, fill the center with rice, and pour some curry sauce over it.

  2. Pour the remaining sauce around the border, garnish with parsley, and serve immediately.

What each ingredient does

Eggs
Set into a firm, sliceable custard that forms the border structure when heated.
Rich milk
Adds moisture and softness, keeping the egg custard tender rather than rubbery.
Cream sauce
Provides a smooth, rich base that carries the curry flavour across the dish.
Curry powder
Adds warm, aromatic spice flavour to the cream sauce.
Cooked rice
Forms the starchy centre filling that soaks up the curry sauce.

The step that matters

Cook the egg border in a water bath. Eggs turn rubbery and curdle when heated too fast or too hot. Setting the mold in boiling water and cooking gently in the oven keeps the custard smooth and tender.
