Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out puff paste to 1 inch thick.

  2. Cut rounds with a patty cutter.

  3. Stamp each round with a smaller cutter about ½ inch deep.

  4. Bake in a 400°F (200°C) oven until done.

  5. Carefully lift the centers out with a knife and remove some of the inside.

  6. When ready to serve, heat the patty shells.

  7. Fill with spaghettina in tomato sauce, mushrooms, or vegetables in cream sauce.

  8. Add finely cut truffles to the tomato sauce if desired.

  9. Place the tops back on and serve.
