What each ingredient does

Mushrooms
Form the main body of the dish and release moisture that is then cooked down.
Egg yolk
Thickens the mixture as it heats, giving it a creamy, coating texture.
Cream
Adds richness and body, helping the mushroom mixture become smooth and thick.
Butter
Adds fat and flavour to the mushrooms and enriches the buttered toast.
Bread
Provides a crisp, absorbent base that soaks up the hot milk and mushroom mixture.

The step that matters

Thickening with egg yolk and cream. Egg yolk sets when heated, but if the mixture gets too hot or boils after adding it, the yolk can scramble and turn grainy. Keep the heat low and stir steadily.

Swap the onion

How well each one fits the dish's main ingredients (mushroom, lemon, butter, parsley, clove, pepper, egg):
