Noodle Pudding

Ingredients

Directions

Make the base

  1. Cook the noodles in boiling milk until thick like mush.

  2. Remove from heat and stir in butter, sugar, chopped almonds, and almond extract.

  3. Once cool, add beaten eggs and cream, mixing well.

Bake and serve

  1. Pour the mixture into a well-buttered mold coated with bread crumbs.

  2. Place the mold in a pan of boiling water in the oven, covering it to prevent browning.

  3. Bake for 30 minutes if the mold has a center pipe, or 45 minutes if it's a plain mold.

  4. Turn out of the mold and serve hot with sauce.

What each ingredient does

Noodles
Cooked in milk until thick, they form the starchy body of the pudding.
Eggs
Set during baking to bind the pudding into a firm, sliceable custard.
Butter
Adds richness and a tender, moist crumb to the pudding.
Cream
Adds moisture and richness, giving a softer, silkier texture.
Milk
Cooks with the noodles to form the thick base and adds moisture.

The step that matters

Covering the mold in the water bath. A gentle water bath with a cover keeps the eggs from heating too fast. This prevents curdling, cracks and a browned surface, so the custard sets evenly.

Swap the almond

How well each one fits the dish's main ingredients (milk, butter, sugar, egg, cream, bread):

  1. Almondthe original
  2. Pecansfits about as well
  3. Cocoafits about as well
