What each ingredient does

Egg yolks
Thicken the soup and add richness as they set gently with the warm liquid.
Butter
Adds fat and richness, and carries the curry powder flavour into the base.
Flour
Thickens the butter and milk mixture into a smooth, body-giving sauce.
Curry powder
Provides the main spiced aroma and flavour of the soup.
Cream
Adds smoothness and richness to the finished soup.

The step that matters

Adding the egg mixture. Egg yolks can scramble if they meet very hot liquid directly. Mixing a little warm soup into the yolks first gently raises their temperature, and the mixture should be returned to the pan on low heat, stirring constantly, so it thickens smoothly without curdling.

Swap the carrot

How well each one fits the dish's main ingredients (onion, turnip, butter, flour, milk, cream, egg):

  1. Leekfits better
  2. Chivefits better
  3. Potatofits better
  4. Carrotthe original

Fit is the average pairing score against onion, turnip, butter, flour, milk, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
