Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a firm, sliceable custard that forms the border structure.
Rich milk
Adds moisture and tenderness, keeping the set custard soft rather than rubbery.
Cooked rice
Forms the starchy center that fills the ring and absorbs the curry sauce.
Curry powder
Gives the cream sauce its warm, aromatic spice flavour.
Cream sauce
Adds richness and moisture, carrying the curry flavour over the rice and border.

The step that matters

Cook the egg border gently in water. Eggs turn grainy and rubbery when overheated. A water bath moderates the heat so the custard sets evenly and stays tender. Remove it once just firm.
