Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the shells

  1. Roll out puff pastry to 1‑inch thick.

  2. Cut rounds with a patty cutter.

  3. Use a smaller cutter to stamp each round about ½‑inch deep.

Bake and hollow

  1. Bake in a 400 °F (200 °C) oven until done.

  2. Carefully lift the centers out with a knife and remove some of the inside.

  3. Heat the patty shells.

Fill and serve

  1. Fill each shell with spaghetti in tomato sauce, mushrooms, or vegetables in a cream or savory sauce.

  2. Add finely cut truffles to the tomato sauce if desired.

  3. Place the tops back on and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff paste
Bakes into flaky, layered shells that rise and hold the filling.
Spaghettina
Provides the bulk of the filling with a soft texture against the crisp pastry.
Tomato sauce
Adds moisture and bright acidity to the filling.
Cream sauce
Adds richness and moisture to the filling.

The step that matters

Bake the pastry until done. Puff pastry rises because its butter layers release steam in a hot oven. If the oven is too cool, the layers will not puff and the shells will turn out dense and greasy.

Swap the tomato

How well each one fits the dish's main ingredients (sauce, mushroom, cream, truffle):

  1. Shallotfits better
  2. Asparagusfits better
  3. Spinachfits about as well
  4. Tomatothe original

Fit is the average pairing score against sauce, mushroom, cream, truffle. Candidates are from the same food group and used in at least 100 recipes.
