Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Escalloped Egg Plant

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Boil the eggplant until tender, then cut it in half and scoop out the pulp, discarding the seeds and skin.

  2. Chop the pulp finely and mix it with bread crumbs, cream, butter, parsley, salt, pepper, and onion juice.

  3. Beat the mixture until well combined, then transfer it to a baking dish.

Bake and serve

  1. Cover the top with dried bread crumbs and small bits of butter.

  2. Bake at 400°F (200°C) until the top is brown.

  3. Serve in the baking dish.

  4. If there are leftovers, cut into ½-inch thick slices and fry in butter for lunch.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the bulk of the dish, giving it a soft, custard-like body once mashed and baked.
Cream or rich milk
Adds moisture and richness, helping the mixture stay tender rather than dry as it bakes.
Butter
Adds fat and flavor, and helps the top crumbs brown in the oven.
Bread crumbs
Absorb moisture in the mixture and form a browned crust on top.

The step that matters

Beat the mixture until well combined. Even mixing spreads the bread crumbs, fat and liquid evenly through the chopped pulp, so the baked dish sets uniformly instead of splitting into wet and dry pockets.
