Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the sauce.
Flour
Thickens the sauce as it cooks with the liquid.
Butter
Adds fat and richness and softens the onion and pepper.
Onion
Adds savoury sweetness as it softens in the butter.

The step that matters

Cook gently for 30 minutes. Simmering gently lets the flour fully cook so it does not taste raw, and lets the tomatoes break down and thicken. Boiling hard can scorch the bottom of the pan and make the sauce uneven.

Swap the tomato

How well each one fits the dish's main ingredients (butter, onion, pepper, flour, clove):

  1. Leekfits better
  2. Chivefits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against butter, onion, pepper, flour, clove. Candidates are from the same food group and used in at least 100 recipes.
