Spinach for Coloring

  1. Pound the spinach in a mortar, adding a little water.

  2. Squeeze the mixture through cheesecloth into a saucepan.

  3. Heat over medium heat until it boils.

  4. Remove from heat when it curdles.

  5. Strain through a fine sieve to collect the coloring.
