What each ingredient does

Veal
Provides the main body of the loaf, binding into a firm, sliceable texture when cooked.
Salt pork
Adds fat that keeps the lean veal moist during baking.
Crackers
Absorb juices and help bind the mixture, giving it a tender, cohesive crumb.
Eggs
Set when baked, holding the loaf together in a firm shape.

The step that matters

Forming the solid loaf. The mixture must be packed firmly so it holds together when baked and sliced. Loose packing can let the loaf crumble or dry out in the oven.
