  3. Crumble the bread finely.

  4. Mix in the butter, salt, and pepper.

Make the dressing

  1. Drain the liquor from the oysters.

  2. Bring the liquor to a boil. Skim the liquor.

  3. Pour the boiled liquor over the bread crumbs.

  4. Add the soaked crusts and the eggs. Mix everything thoroughly with your hands.

  5. Gently fold in the oysters without breaking them.

Stuff the turkey

  1. Stuff the turkey, starting with the breast, using a spoonful of dressing followed by three or four oysters until filled.

What each ingredient does

Stale bread
Forms the body of the dressing and soaks up the liquid.
Butter
Adds fat and richness, giving the dressing a softer, moister texture.
Eggs
Bind the crumbs together so the dressing holds its shape when stuffed.
Oysters
Add their briny flavor and moisture to the dressing.

The step that matters

Gently fold in the oysters without breaking them. Oysters are delicate and release liquor and flavor when torn. Folding gently keeps them whole, so they stay plump and the dressing keeps even texture and moisture.
