Pressed Chicken

Ingredients

Directions

Cook the chicken

  1. Boil the chickens in a small amount of water with a little salt until fully cooked.

  2. Remove the meat from the bones, discarding the skin, and separate the light meat from the dark meat.

  3. Chop the meat and season with salt and pepper to taste.

Press and serve

  1. In a meat presser or mold, layer the light and dark meat until all is used.

  2. Add about 1 cup of the reserved cooking liquid and place a heavy weight on top.

  3. Once cooled, slice the pressed chicken.

  4. For a variation, mix all the meat together with the optional pounded cracker and the cooking liquid before pressing.

What each ingredient does

Chickens
Provide the meat that is pressed into a firm, sliceable loaf.
Reserved cooking liquid
Adds moisture and savoury flavour to the pressed meat.
Pounded cracker
Optional binder that helps the chopped meat hold together when pressed.

The step that matters

Add the cooking liquid and press under weight. Enough liquid keeps the chopped meat moist, while even weight packs the pieces so they set into a firm loaf that slices cleanly.
