What each ingredient does

Egg yolks
Mashed yolks form the creamy base that gives the dressing body and richness.
Olive oil or melted butter
Fat emulsifies with the yolks to make the dressing smooth and rich.
Vinegar
Adds acidity that sharpens the dressing and balances the fat.
Lettuce
Forms the base of the salad that the dressing coats.

The step that matters

Gradually add the vinegar while mixing thoroughly. Adding the vinegar slowly while mixing lets the fat and yolk emulsify into a smooth dressing. Adding it all at once can cause the mixture to separate and look broken.
